Crockpot Chicken and Dumplings

I think I got this recipe from a yahoo group. It’s one of those super easy lazy chef recipes that work well for any kind of season. During hot weather, you don’t have to heat up the whole kitchen using the oven, cuz you’re using a crockpot instead. During cold weather, chicken and dumplings are one of those meals that just warm you thinking about it! Also, you can easily warm up the leftovers in a casserole dish. (Make sure you eat all the dumplings from the first batch, though, cuz I’m not sure how well they’d reheat. Then you can make new with your leftovers).
Easy Chicken and Dumplings
Cooked chicken (however much you like)
2 cans cream of chicken soup (10.75 oz each size)
1 onion, finely chopped (I use onion flakes)
refrigerator biscuit dough
Put all ingredients in crockpot, except for refrigerator biscuit dough. Fill with enough water to cover. Cook on high for a couple hours, or until hot. (If you have raw chicken, cook on high for 6 to 7 hours, or until done). About 90 minutes before serving, tear up the biscuit dough in small pieces and place on top of the chicken mixture in the crockpot. Cook until dough is no longer raw in middle.
For reheating, I just tore up more bits of the biscuit dough and scattered them along the top. Bake until the dough is cooked through.

Oh wow. This kind of dish really takes me back to childhood and all those wonderful foods that taste best when made by my mother. This recipe is a keeper!

Question: this is cooked in a crockpot. However, I was noticing the biscuits are ‘browned’. In the recipe, it does say ” Bake until the dough is cooked through.”
Do you actually bake it? Sincere question.

I think a bag of frozen mixed vegetables would stretch this a little, and maybe make it taste like a pot pie.

My first visit here – came to you through a Frugal Girls post. I can’t wait to try this one for a family dinner, and I’m going to add frozen peas and diced potatoes, and maybe some diced carrots too. A nice alternative to refrigerator biscuits is Pillsbury crescent rolls – they add a slightly sweet taste and are flaky and yummy with the savory chicken. I unroll them and lay the dough over the top.

I consider a crockpot as a baking vessel, so that’s probably why the recipe said “bake” until done. The picture is when I reheated the chicken and dumplings in the oven, using raw biscuit dough since, as I mentioned, I wasn’t sure how well the previously baked biscuits would reheat.

Talk about easy!! I can’t be on my feet long (like 10 min. is long) so recipes like this are treasures!! Crock pot is one of my best friends, too.
