My son absolutely loves McGriddles, but he doesn’t get them often due to the fact we live about 100 miles from the nearest McDonald’s, and we don’t have a car! So yep, that puts a crimp in his munching down some McGriddles. In the meantime, until we can get back to civilization, I make him some copycat McGriddles with the following recipe.
Basically all you do is fry up your sausage or bacon and eggs. For the pancake part, you’ll have to experiment around to how much maple flavoring you like. When I did this last year, I used an easy pancake mix where, instead of adding water, I added maple syrup. Welllll…that was a lot of syrup, and it just didn’t have as strong a taste as I wanted. So then I tried maple syrup flavoring. (It’s a little bottle hanging out with the vanilla in the spice section). For this recipe, I prepared the pancake mix as I usually do and then added between 1.5 and 2 Tablespoons of maple syrup flavoring. Oh, and remember the slice of cheese if you like cheese!
This qualifies as a lazy chef recipe – even though frying up bacon or sausage is not something I like to take the time to do – because it’s easy. Using a sandwich maker makes it easier, too, though I don’t think I like how thick the pancakes get in it. It was the first time I used the sandwich maker for this copycat McGriddles recipe, and I won’t next time; I’ll just make them in the skillet like I normally do so they can be a little thinner.
Anyhoo, we had some bacon left over the next day, so I made a good ol’ fashioned breakfast sandwich. It’s the same thing as a McGriddle, but using toast instead of pancakes.
